These moist and delicious zucchini chocolate chip muffins are a perfect treat for breakfast or snack time. Packed with chocolate chips and the goodness of zucchini, they are sure to please everyone.

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until well combined.
- Add the grated zucchini to the wet ingredients and stir until incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Fold in the chocolate chips until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to squeeze out excess moisture from the grated zucchini using a clean kitchen towel before adding it to the batter.
- You can substitute half of the all-purpose flour with whole wheat flour for a healthier version.
- Feel free to add nuts or dried fruit for additional texture and flavor.
