  • 2 pounds young beef, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent.
  3. Increase the heat to medium-high and add the young beef cubes, browning them on all sides.
  4. Stir in the sliced carrots and diced potatoes.
  5. Add the beef broth, red wine, tomato paste, thyme, rosemary, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and cover.
  7. Let it simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
