- 2 pounds young beef, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 1 cup beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until translucent.
- Increase the heat to medium-high and add the young beef cubes, browning them on all sides.
- Stir in the sliced carrots and diced potatoes.
- Add the beef broth, red wine, tomato paste, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover.
- Let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
