- 2 cups cooked shredded chicken
- 1 can (15 oz) diced tomatoes
- 1 cup corn kernels
- 1 cup black beans, rinsed and drained
- 4 cups low-sodium chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 lime, juiced
- 2 tbsp fresh cilantro, chopped
- 4 small corn tortillas, cut into strips
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add onion and garlic, sauté until softened.
- Add cumin and chili powder, stir for 30 seconds.
- Pour in chicken broth, diced tomatoes, corn, and black beans. Bring to a boil.
- Reduce heat, add shredded chicken, and simmer for 10 minutes.
- Stir in lime juice and cilantro. Season with salt and pepper.
- Preheat oven to 400°F. Spread tortilla strips on a baking sheet and bake for 5-7 minutes until crispy.
- Serve soup topped with crispy tortilla strips.

- Use rotisserie chicken for easier preparation.
