  • 1 tsp chili powder
  • 1 lime, juiced
  • 2 tbsp fresh cilantro, chopped
  • 4 small corn tortillas, cut into strips

Instructions

  1. Heat a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add cumin and chili powder, stir for 30 seconds.
  3. Pour in chicken broth, diced tomatoes, corn, and black beans. Bring to a boil.
  4. Reduce heat, add shredded chicken, and simmer for 10 minutes.
  5. Stir in lime juice and cilantro. Season with salt and pepper.
  6. Preheat oven to 400°F. Spread tortilla strips on a baking sheet and bake for 5-7 minutes until crispy.
  7. Serve soup topped with crispy tortilla strips.
