Ingredients

- 500g chicken thighs, boneless and skinless
- 3 tbsp fish sauce
- 2 tbsp sugar
- 1 tbsp vegetable oil
- 1 tbsp minced ginger
- 2 cloves garlic, minced
- 1 small onion, sliced
- 1/2 cup water
- 1 red chili, sliced (optional)
- 2 spring onions, chopped
Instructions
- Heat oil in a pan over medium heat.
- Add sugar and stir until it melts and turns golden brown.
- Add chicken and sear until lightly browned on all sides.
- Stir in ginger, garlic, and onion. Cook for 2 minutes.
- Pour in fish sauce and water. Simmer for 15 minutes until chicken is cooked.
- Garnish with chili and spring onions before serving.
Notes
- Adjust sugar to taste for preferred sweetness.
- Use a non-stick pan to prevent the caramel from burning.
- Serve with steamed rice for a complete meal.
