- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture into the bottom of a 9×9 inch baking dish to form a crust.
- In a large mixing bowl, beat the cream cheese until smooth, then add the sugar and vanilla extract. Mix until combined.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the pumpkin puree, pumpkin pie spice, cinnamon, and salt until fully incorporated.
- Pour the cheesecake mixture over the crust and spread evenly.
- Bake for 30-35 minutes or until the center is set and the edges are lightly golden.
- Allow to cool completely before refrigerating for at least 2 hours.
- Cut into bars and serve chilled.
Notes
- These bars can be made a day in advance and stored in the refrigerator.
- Top with whipped cream or a sprinkle of cinnamon for an extra touch.
