Ingredients

- 4 large flour tortillas
- 1 tbsp butter or oil
- Salt and pepper to taste
Instructions
- Heat butter or oil in a pan over medium heat.
- Add diced onions and bell peppers. Cook until softened.
- Whisk eggs and milk in a bowl. Pour into the pan.
- Scramble the eggs until fully cooked. Season with salt and pepper.
- Warm the tortillas in a dry pan or microwave.
- Divide the egg mixture between the tortillas.
- Top each with cheese and cooked sausage or bacon.
- Fold the sides of the tortilla inward and roll tightly.
- Serve immediately or wrap in foil for later.
