- 2 cups cooked jasmine rice, chilled
- 1 lb shrimp, peeled and deveined
- 1 cup pineapple, diced
- 1 red bell pepper, diced
- 1 cup peas and carrots mix
- 3 green onions, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
- In the same skillet, add sesame oil and sauté garlic until fragrant, about 30 seconds.
- Add the red bell pepper, peas, and carrots, and cook until tender, about 2-3 minutes.
- Stir in the diced pineapple and cooked rice, mixing well.
- Add the cooked shrimp back into the skillet along with soy sauce, and mix until everything is evenly coated and heated through.
- Season with salt and pepper to taste, and stir in green onions.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- For a spicier version, add chopped red pepper flakes or sriracha.
- Feel free to substitute shrimp with chicken or tofu for different protein options.
- Use fresh pineapple for the best flavor, but canned pineapple works too.
