Description

Ingredients

  • 2 cups cooked jasmine rice, chilled
  • 1 lb shrimp, peeled and deveined
  • 1 cup pineapple, diced
  • 1 red bell pepper, diced
  • 1 cup peas and carrots mix
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
  3. In the same skillet, add sesame oil and sauté garlic until fragrant, about 30 seconds.
  4. Add the red bell pepper, peas, and carrots, and cook until tender, about 2-3 minutes.
  5. Stir in the diced pineapple and cooked rice, mixing well.
  6. Add the cooked shrimp back into the skillet along with soy sauce, and mix until everything is evenly coated and heated through.
  7. Season with salt and pepper to taste, and stir in green onions.
  8. Serve hot, garnished with fresh cilantro if desired.

Notes

  • For a spicier version, add chopped red pepper flakes or sriracha.
  • Feel free to substitute shrimp with chicken or tofu for different protein options.
  • Use fresh pineapple for the best flavor, but canned pineapple works too.
