  • 1 cup shredded coconut
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced mango
  • 1/2 cup diced pineapple
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, mix flour with salt, pepper, garlic powder, and paprika.
  3. In another bowl, place the beaten eggs. In a third bowl, add the shredded coconut.
  4. Dip each shrimp first into the flour mixture, shaking off excess, then into the beaten eggs, and finally into the shredded coconut, pressing gently to adhere.
  5. Place coated shrimp on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and cooked through.
  6. While the shrimp are baking, prepare the tropical sauce by mixing sour cream, lime juice, honey, salt, and pepper in a bowl.
  7. Warm the tortillas in a dry skillet or microwave until pliable.
  8. To assemble the tacos, place a few shrimp on each tortilla, add a handful of shredded lettuce, diced mango, diced pineapple, and chopped cilantro.
  9. Drizzle with the tropical sauce and serve immediately.
