Ingredients

  • 6 medium apples, firm variety (Granny Smith or Fuji recommended)
  • 2 cups (400g) granulated erythritol or other THM-approved sweetener
  • 1/2 cup (120ml) light corn syrup or sugar-free alternative
  • 3/4 cup (180ml) water
  • 1/2 teaspoon red gel food coloring (optional)
  • 1/2 teaspoon cinnamon extract (optional)
  • 6 wooden candy apple sticks or sturdy lollipop sticks
  • Non-stick cooking spray
  • Parchment paper or silicone baking mat

Instructions

  1. Prepare your workspace: line a baking sheet with parchment paper and lightly coat it with non-stick cooking spray. Have your apples prepared and within reach.
  2. Remove all wax from the apples by dipping them in boiling water for 5 seconds and scrubbing them with a rough kitchen towel. Insert sticks into the stem end of each apple.
  3. In a heavy-bottomed saucepan, combine the erythritol, corn syrup (or alternative), and water. Stir until the sweetener is moistened.
  4. Clip a candy thermometer to the side of the pan and bring the mixture to a full rolling boil without stirring. Wipe down any sugar crystals from the sides of the pan.
  5. Boil until the thermometer reads between 300°F and 310°F (149°C–154°C). This takes about 15 to 20 minutes. Do not walk away during the last 5 minutes.
  6. Once at 300°F, remove from heat and stir in the food coloring and cinnamon extract. Allow bubbles to settle for 1 to 2 minutes.
  7. Tilt the pan and dip each apple into the syrup, rotating to coat completely. Let excess syrup drip back into the pan before placing it stick-side up on the prepared sheet.
  8. Allow the apples to cool completely at room temperature for at least 20 minutes before serving.

Notes

  • Ensure the syrup reaches 300°F for a hard, glossy finish.
  • Wait for bubbles to settle before dipping to avoid a textured coating.
  • Store at room temperature, uncovered, and consume within 1 to 2 days.
