Ingredients

  • 2 boneless, skinless chicken breasts, sliced into strips
  • 1 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 2 cups shredded cabbage
  • 1/4 cup chopped cilantro
  • 4 large flour tortillas
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Heat oil in a pan over medium heat. Cook chicken strips until fully done (5-7 minutes). Set aside.
  2. In a bowl, whisk peanut butter, soy sauce, honey, lime juice, ginger, garlic, and red pepper flakes to make the sauce.
  3. Toss cooked chicken with half the sauce.
  4. Lay out tortillas and spread remaining sauce on each.
  5. Divide chicken, bell pepper, carrots, cabbage, and cilantro among tortillas.
  6. Roll tightly and slice in half before serving.
