- 2 boneless, skinless chicken breasts, sliced into strips
- 1 tbsp vegetable oil
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 2 cups shredded cabbage
- 1/4 cup chopped cilantro
- 4 large flour tortillas
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1/2 tsp red pepper flakes (optional)
Instructions
- Heat oil in a pan over medium heat. Cook chicken strips until fully done (5-7 minutes). Set aside.
- In a bowl, whisk peanut butter, soy sauce, honey, lime juice, ginger, garlic, and red pepper flakes to make the sauce.
- Toss cooked chicken with half the sauce.
- Lay out tortillas and spread remaining sauce on each.
- Divide chicken, bell pepper, carrots, cabbage, and cilantro among tortillas.
- Roll tightly and slice in half before serving.

- Use rotisserie chicken for a quicker option.
- Add sriracha for extra spice.
- Substitute almond butter if preferred.
