A fresh and vibrant Thai beef salad with tender beef, crisp vegetables, and a zesty dressing.
Ingredients

- 1 lb flank steak
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 2 cups mixed salad greens
- 1 cup cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1 tablespoon crushed peanuts (optional)
Instructions
- Preheat a grill or grill pan over medium-high heat.
- In a small bowl, whisk together the soy sauce, fish sauce, lime juice, brown sugar, and sesame oil.
- Marinate the flank steak in half of the dressing for at least 30 minutes.
- Grill the flank steak for about 4-5 minutes per side or until it reaches your desired doneness.
- Remove the steak from the grill and let it rest for 5-10 minutes before slicing it thinly against the grain.
- In a large bowl, combine the salad greens, cucumber, cherry tomatoes, red onion, cilantro, and mint.
- Add the sliced beef on top of the salad and drizzle with the remaining dressing.
- Toss gently to combine and top with crushed peanuts if desired.
- Serve immediately and enjoy your Thai beef salad!
