Ingredients

  • 8 oz (225g) sirloin steak, cut into small cubes
  • 4 large eggs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add steak cubes and cook for 2-3 minutes until browned on all sides. Remove from the pan.
  3. Reduce heat to medium and melt butter in the same skillet.
  4. Add minced garlic and sauté for 30 seconds.
  5. Whisk eggs in a bowl, then pour into the skillet.
  6. Scramble the eggs gently until just set.
  7. Return steak bites to the skillet and mix with eggs.
  8. Stir in fresh herbs and season with salt and pepper.
  9. Serve immediately.
