Ingredients

- 8 oz (225g) sirloin steak, cut into small cubes
- 4 large eggs
- 1 tbsp olive oil
- 1 tbsp butter
- 1 clove garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Add steak cubes and cook for 2-3 minutes until browned on all sides. Remove from the pan.
- Reduce heat to medium and melt butter in the same skillet.
- Add minced garlic and sauté for 30 seconds.
- Whisk eggs in a bowl, then pour into the skillet.
- Scramble the eggs gently until just set.
- Return steak bites to the skillet and mix with eggs.
- Stir in fresh herbs and season with salt and pepper.
- Serve immediately.
