- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- 1/4 cup orange juice
- 1 tsp orange zest
- 1 tbsp fresh parsley, chopped
Instructions
- Season beef medallions with Cajun seasoning, salt, and black pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear beef for 3-4 minutes per side for medium-rare. Remove from pan.
- In the same skillet, melt butter. Add garlic and sauté for 30 seconds.
- Pour in orange juice and stir in orange zest. Simmer for 2 minutes.
- Return beef to the skillet, spooning sauce over the medallions.
- Garnish with fresh parsley before serving.
