Ingredients

  • 1 shallot, finely chopped
  • 1 garlic clove, minced
  • 100ml cognac
  • 200ml heavy cream
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Season the beef fillet with salt and pepper, then sear for 3-4 minutes per side.
  3. Remove the beef and set aside.
  4. In the same pan, sauté shallot and garlic until soft.
  5. Pour in cognac and let it simmer for 2 minutes.
  6. Stir in heavy cream and mustard, then cook for 3-4 minutes until thickened.
  7. Return the beef to the pan and coat with the sauce.
  8. Garnish with parsley and serve hot.
