Description

A quick and easy meal featuring tender chicken, crisp broccoli, and fluffy rice coated in a sweet and spicy chili sauce.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, diced
  • 1 cup (200g) white rice, uncooked
  • 2 cups (200g) broccoli florets
  • 3 tbsp sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook rice according to package instructions. Set aside.
  2. Heat oil in a pan over medium heat. Add garlic and ginger, sauté for 30 seconds.
  3. Add chicken, cook until no longer pink (5-6 minutes).
  4. Stir in broccoli and cook for 3-4 minutes until tender-crisp.
  5. Add sweet chili sauce, soy sauce, and red pepper flakes. Stir well.
  6. Mix in cooked rice and heat through for 2 minutes.
  7. Season with salt and pepper. Serve warm.

Notes

  • Use pre-cooked rice to save time.
  • Adjust chili sauce for more or less heat.
  • Add carrots or bell peppers for extra veggies.
