- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 3 tbsp sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 2 cloves garlic (minced)
- 1 tsp ginger (grated)
- 1 tbsp vegetable oil
- 1 red bell pepper (sliced)
- 1 green onion (chopped)
- 1 tsp sesame seeds
Instructions
- Heat oil in a pan over medium-high heat.
- Add chicken and cook until browned, about 5-6 minutes.
- Add garlic and ginger, cook for 1 minute.
- Stir in sweet chili sauce, soy sauce, honey, and rice vinegar.
- Add bell pepper and cook for 3-4 minutes until softened.
- Garnish with green onion and sesame seeds.
- Serve hot with rice.
Notes
- Adjust chili sauce for more or less heat.
- For extra crunch, add roasted peanuts.
- Works well with shrimp or tofu as substitutes.
