- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons sriracha sauce
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1 cup fresh pineapple, diced
- 2 green onions, sliced (for garnish)
- Salt to taste
Instructions
- In a large bowl, whisk together pineapple juice, soy sauce, honey, sriracha, garlic, ginger, and black pepper.
- Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and discard the marinade. Grill chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- During the last few minutes of grilling, add the diced pineapple to the grill. Cook until caramelized and slightly charred.
- Serve the grilled chicken topped with grilled pineapple and garnish with sliced green onions.
Notes
- For extra flavor, marinate the chicken overnight.
- Adjust the amount of sriracha based on your spice preference.
- Serve with rice or a fresh salad for a complete meal.
