- 1 package of store-bought flatbread
- 2 medium summer squash, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup goat cheese, crumbled
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh basil, chopped
- Balsamic glaze for drizzling (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the sliced summer squash with olive oil, salt, and black pepper.
- Spread the flatbread on a baking sheet and layer with the seasoned summer squash slices.
- Sprinkle the crumbled goat cheese and shredded mozzarella evenly over the squash.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the squash is tender.
- Remove from the oven, sprinkle with fresh basil, and drizzle with balsamic glaze if desired.
