Description
A fresh and vibrant summer meal that’s perfect for dinner. Grilled lemon herb chicken served alongside a medley of seasonal vegetables.
Ingredients

- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice and zest of 2 lemons
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 red onion, cut into wedges
- Fresh basil for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over the chicken. Seal or cover and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and discard the marinade. Grill chicken for 6-7 minutes per side or until fully cooked.
- While the chicken is grilling, toss the cherry tomatoes, zucchini, bell pepper, and red onion with olive oil, salt, and pepper.
- In the last 5 minutes of grilling, place the vegetables on the grill. Cook until they are tender and slightly charred.
- Serve the grilled chicken with the vegetables and garnish with fresh basil.
