Description

A fresh and vibrant summer meal that’s perfect for dinner. Grilled lemon herb chicken served alongside a medley of seasonal vegetables.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice and zest of 2 lemons
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 red onion, cut into wedges
  • Fresh basil for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over the chicken. Seal or cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and discard the marinade. Grill chicken for 6-7 minutes per side or until fully cooked.
  5. While the chicken is grilling, toss the cherry tomatoes, zucchini, bell pepper, and red onion with olive oil, salt, and pepper.
  6. In the last 5 minutes of grilling, place the vegetables on the grill. Cook until they are tender and slightly charred.
  7. Serve the grilled chicken with the vegetables and garnish with fresh basil.
