Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed. Remove from heat and let cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Once quinoa is cooled, add it to the vegetable mixture. Drizzle with dressing and toss until well combined.
- Serve chilled or at room temperature.
