Ingredients

  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced

  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed. Remove from heat and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Once quinoa is cooled, add it to the vegetable mixture. Drizzle with dressing and toss until well combined.
  5. Serve chilled or at room temperature.
