- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 tablespoon cornstarch
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed summer berries (strawberries, blueberries, raspberries, blackberries)
- Mint leaves for garnish (optional)
Instructions
- Preheat your oven to 275°F (135°C) and line a baking sheet with parchment paper.
- In a clean, dry bowl, beat the egg whites with an electric mixer until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form.
- Add the vanilla extract, white vinegar, and cornstarch, and gently fold them into the egg whites until just combined.
- Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle with a slight well in the center.
- Bake for 1 hour, then turn off the oven and leave the pavlova inside to cool completely.
- Once cooled, beat the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form.
- Carefully transfer the pavlova to a serving platter and top with the whipped cream and mixed berries.
- Garnish with mint leaves if desired, and serve immediately.
Notes
- Make sure your mixing bowl and beaters are completely clean and dry for the egg whites to whip properly.
- You can prepare the pavlova in advance and store it in an airtight container at room temperature until serving.
- Feel free to customize the berry toppings based on your preference or seasonal availability.
