- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 onion, cut into wedges
- Skewers (wooden or metal)
Instructions
- In a bowl, whisk together olive oil, soy sauce, honey, apple cider vinegar, garlic, black pepper, salt, and smoked paprika.
- Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat.
- While the grill is heating, prepare your skewers by threading the marinated chicken, bell peppers, and onion onto them, alternating between the chicken and vegetables.
- Once the grill is ready, place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
- Serve warm with your favorite BBQ sides.
Notes
- For even more flavor, you can add additional vegetables such as zucchini or cherry tomatoes to the skewers.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- These skewers can be served with a side of rice, grilled corn, or a fresh summer salad.
