Description

These rich and fudgy brownies are infused with mint and topped with a creamy mint frosting, perfect for celebrating St. Patrick’s Day!


Ingredients

  • 1 cup (226g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 cup (90g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup (180g) chocolate chips
  • 1/2 teaspoon peppermint extract
  • 1 cup (240ml) heavy cream
  • 2 cups (240g) powdered sugar
  • Green food coloring (optional)
  • Chocolate shavings or sprinkles (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the melted butter and granulated sugar. Stir until well combined.
  3. Add in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. Sift together the flour, cocoa powder, salt, and baking powder in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips and peppermint extract, ensuring they are evenly distributed throughout the batter.
  6. Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. While the brownies are baking, prepare the mint frosting. In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.
  8. If desired, add a few drops of green food coloring to the frosting and mix until evenly colored.
  9. Once the brownies are done, allow them to cool completely in the pan. Spread the mint frosting evenly over the cooled brownies.
  10. Garnish with chocolate shavings or sprinkles before cutting them into squares to serve.

Notes

  • For a stronger mint flavor, increase the amount of peppermint extract to your liking.
  • Store the brownies in an airtight container at room temperature for up to 3 days.
