These rich and fudgy brownies are infused with mint and topped with a creamy mint frosting, perfect for celebrating St. Patrick’s Day!

- 1 cup (226g) unsalted butter, melted
- 2 cups (400g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 1 cup (90g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup (180g) chocolate chips
- 1/2 teaspoon peppermint extract
- 1 cup (240ml) heavy cream
- 2 cups (240g) powdered sugar
- Green food coloring (optional)
- Chocolate shavings or sprinkles (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, combine the melted butter and granulated sugar. Stir until well combined.
- Add in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- Sift together the flour, cocoa powder, salt, and baking powder in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and peppermint extract, ensuring they are evenly distributed throughout the batter.
- Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- While the brownies are baking, prepare the mint frosting. In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.
- If desired, add a few drops of green food coloring to the frosting and mix until evenly colored.
- Once the brownies are done, allow them to cool completely in the pan. Spread the mint frosting evenly over the cooled brownies.
- Garnish with chocolate shavings or sprinkles before cutting them into squares to serve.
Notes
- For a stronger mint flavor, increase the amount of peppermint extract to your liking.
- Store the brownies in an airtight container at room temperature for up to 3 days.
