Delicious mint chocolate cupcakes topped with a creamy mint frosting, perfect for celebrating St. Patrick’s Day!

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- 1 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 2–3 tbsp heavy cream
- Green food coloring (optional)
- Chocolate shavings or mint leaves for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, mix together the oil, milk, eggs, vanilla extract, and peppermint extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- For the frosting, beat the softened butter in a mixing bowl until creamy.
- Gradually add the powdered sugar, mixing until smooth. Add heavy cream as needed to reach desired consistency.
- Add green food coloring if desired and mix until well combined.
- Frost the cooled cupcakes with the mint frosting and garnish with chocolate shavings or mint leaves.
Notes
- For extra mint flavor, you can add more peppermint extract to the frosting.
- These cupcakes can be made a day in advance and stored in an airtight container.
