Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 23 tbsp heavy cream
  • Green food coloring (optional)
  • Chocolate shavings or mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix together the oil, milk, eggs, vanilla extract, and peppermint extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  7. For the frosting, beat the softened butter in a mixing bowl until creamy.
  8. Gradually add the powdered sugar, mixing until smooth. Add heavy cream as needed to reach desired consistency.
  9. Add green food coloring if desired and mix until well combined.
  10. Frost the cooled cupcakes with the mint frosting and garnish with chocolate shavings or mint leaves.

Notes

  • For extra mint flavor, you can add more peppermint extract to the frosting.
  • These cupcakes can be made a day in advance and stored in an airtight container.
