Description
Deliciously crispy rice bites topped with spicy tuna, perfect as an appetizer or a party snack.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 pound sushi-grade tuna, diced
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha (or to taste)
- 1 avocado, sliced
- Sesame seeds for garnish
- Green onions, finely chopped for garnish
- Soy sauce for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 20 minutes.
- Remove from heat and let sit, covered, for another 10 minutes. Fluff the rice with a fork.
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Allow to cool.
- In a separate bowl, combine the diced tuna, mayonnaise, and sriracha. Adjust the sriracha to taste based on your spice preference.
- Once the rice has cooled, press it firmly into a greased baking dish to create a compact layer. Refrigerate for at least 30 minutes to set.
- Remove the rice from the dish and cut into bite-sized squares or rectangles.
- Heat oil in a pan over medium-high heat. Fry the rice bites until golden and crispy on both sides, about 2-3 minutes per side.
- Top each crispy rice bite with a slice of avocado and a spoonful of the spicy tuna mixture.
- Garnish with sesame seeds and chopped green onions before serving. Serve with soy sauce on the side.
Notes
- To make the rice crispy, ensure that you fry them in enough oil and do not overcrowd the pan.
- You can adjust the spiciness by adding more or less sriracha to the tuna mixture.
- These bites are best served fresh but can be refrigerated for a short period.
