Ingredients

- 2 boneless, skinless chicken breasts, cut into strips
- 1/4 cup sriracha sauce
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp minced garlic
- 1 cup cooked white rice
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1 tbsp vegetable oil
- 1 tsp sesame seeds (optional)
Instructions
- Heat oil in a pan over medium-high heat.
- Cook chicken strips for 5-6 minutes until golden brown and fully cooked.
- In a bowl, mix sriracha, honey, soy sauce, rice vinegar, and garlic.
- Pour the sauce over the chicken and cook for 2 minutes until the glaze thickens.
- Assemble rice in bowls and top with chicken, carrots, and cucumbers.
- Sprinkle sesame seeds if desired.
Notes
- Adjust sriracha for more or less heat.
- Use brown rice for a healthier option.
- Store leftovers in an airtight container for up to 3 days.
