Ingredients

  • 1 lb (450g) raw shrimp, peeled and deveined
  • 1 cup lime juice (freshly squeezed)
  • 1 ripe mango, diced
  • 1 small red onion, finely chopped
  • 12 jalapeño peppers, finely chopped (adjust to taste)
  • 1/2 cup cilantro, chopped
  • Salt to taste
  • Black pepper to taste
  • Avocado slices for garnish (optional)
  • Tortilla chips for serving

Instructions

  1. In a medium bowl, combine the shrimp and lime juice. Make sure the shrimp are fully submerged in the juice. Cover and refrigerate for 30-60 minutes until the shrimp turn pink and opaque.
  2. Once the shrimp are ready, drain excess lime juice and return the shrimp to the bowl.
  3. Add the diced mango, chopped red onion, jalapeños, and cilantro to the shrimp. Mix gently to combine.
  4. Season with salt and black pepper to taste. Adjust spice level by adding more jalapeño if desired.
  5. Serve immediately with avocado slices on top and tortilla chips on the side.
