Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, toss the shrimp with Cajun seasoning until well coated. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
  5. Pour in the chicken broth and diced tomatoes. Bring to a simmer, then cover and cook for 15 minutes or until the rice is tender and liquid is absorbed.
  6. In the last 5 minutes of cooking, add the seasoned shrimp on top of the rice. Cover and let cook until the shrimp are pink and cooked through.
  7. Season with salt and pepper to taste. Fluff the rice with a fork and mix in the shrimp.
  8. Garnish with fresh parsley before serving.
