- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup diced tomatoes (canned or fresh)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, toss the shrimp with Cajun seasoning until well coated. Set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
- Pour in the chicken broth and diced tomatoes. Bring to a simmer, then cover and cook for 15 minutes or until the rice is tender and liquid is absorbed.
- In the last 5 minutes of cooking, add the seasoned shrimp on top of the rice. Cover and let cook until the shrimp are pink and cooked through.
- Season with salt and pepper to taste. Fluff the rice with a fork and mix in the shrimp.
- Garnish with fresh parsley before serving.
