Ingredients

- 2 salmon fillets (6 oz each)
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss vegetables with olive oil, garlic powder, salt, and black pepper.
- Spread vegetables on a baking sheet and roast for 15 minutes.
- Rub salmon fillets with Cajun seasoning.
- Add salmon to the baking sheet with vegetables.
- Roast for another 10-12 minutes until salmon is cooked through.
- Serve immediately.
