Ingredients

  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 tsp garlic powder

  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, garlic powder, salt, and black pepper.
  3. Spread vegetables on a baking sheet and roast for 15 minutes.
  4. Rub salmon fillets with Cajun seasoning.
