Ingredients

- 2 boneless chicken breasts
- 1 tbsp Cajun seasoning
- 8 oz penne pasta
- 1 cup Alfredo sauce
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F.
- Toss vegetables with olive oil, garlic powder, salt, and pepper. Roast for 20 minutes.
- Cook penne according to package instructions. Drain and set aside.
- Season chicken with Cajun seasoning. Cook in a skillet over medium heat for 6-7 minutes per side.
- Heat Alfredo sauce in a pan. Stir in cooked penne.
- Slice chicken and serve over penne with roasted vegetables.
