Ingredients

  • 2 boneless chicken breasts
  • 1 tbsp Cajun seasoning
  • 8 oz penne pasta
  • 1 cup Alfredo sauce
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Toss vegetables with olive oil, garlic powder, salt, and pepper. Roast for 20 minutes.
  3. Cook penne according to package instructions. Drain and set aside.
  4. Season chicken with Cajun seasoning. Cook in a skillet over medium heat for 6-7 minutes per side.
  5. Heat Alfredo sauce in a pan. Stir in cooked penne.
