Ingredients

  • 2 pounds baby potatoes, halved
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped red onion
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the baby potatoes and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool slightly. When cool enough to handle, gently smash each potato with the bottom of a glass or a fork.
  3. In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, olive oil, salt, and pepper.
  4. Add the smashed potatoes, chives, and red onion to the bowl. Gently fold the ingredients together until well combined.
  5. Taste and adjust seasoning if necessary. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add other ingredients like diced celery, bacon bits, or hard-boiled eggs for extra flavor.
  • This salad can be made a day in advance to let the flavors meld together.
