A delicious and hearty smashed potato salad that’s perfect for gatherings and picnics.
Ingredients

- 2 pounds baby potatoes, halved
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons Dijon mustard
- 1/4 cup chopped fresh chives
- 1/4 cup chopped red onion
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Bring a large pot of salted water to a boil. Add the baby potatoes and cook until tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly. When cool enough to handle, gently smash each potato with the bottom of a glass or a fork.
- In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, olive oil, salt, and pepper.
- Add the smashed potatoes, chives, and red onion to the bowl. Gently fold the ingredients together until well combined.
- Taste and adjust seasoning if necessary. Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other ingredients like diced celery, bacon bits, or hard-boiled eggs for extra flavor.
- This salad can be made a day in advance to let the flavors meld together.
