  • 2 tbsp cornstarch (optional, for thickening)

Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, mix sweet chili sauce, soy sauce, garlic, ginger, rice vinegar, and red pepper flakes.
  3. Pour the sauce over the chicken, ensuring it’s fully coated.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  5. If thickening the sauce, mix cornstarch and water in a small bowl, then stir into the slow cooker. Cook for an additional 15 minutes.
  6. Shred the chicken using two forks or serve whole.
