- 1.5 lbs chicken breast, cubed
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chicken broth
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan and sauté onion, garlic, and ginger until soft.
- Add chicken and cook until lightly browned.
- Transfer chicken mixture to the slow cooker.
- Add sweet potatoes, coconut milk, curry powder, turmeric, cumin, salt, pepper, and chicken broth.
- Stir well to combine.
- Cook on low for 6 hours or high for 3 hours.
- Garnish with fresh cilantro before serving.
