Ingredients

  • 1.5 lbs chicken breast, cubed
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pan and sauté onion, garlic, and ginger until soft.
  2. Add chicken and cook until lightly browned.
  3. Transfer chicken mixture to the slow cooker.
  4. Add sweet potatoes, coconut milk, curry powder, turmeric, cumin, salt, pepper, and chicken broth.
  5. Stir well to combine.
  6. Cook on low for 6 hours or high for 3 hours.
  7. Garnish with fresh cilantro before serving.
