Description

A classic French dish made easy with a slow cooker. Tender beef, mushrooms, and carrots simmer in a rich red wine sauce.


Ingredients

  • 2 lbs beef chuck, cubed
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Brown the bacon in a skillet, then transfer to the slow cooker.
  2. Season beef with salt and pepper, then brown in the same skillet. Add to the slow cooker.
  3. Sauté onions, carrots, and mushrooms in the skillet. Stir in garlic and tomato paste, then transfer to the slow cooker.
  4. Pour in red wine and beef broth. Add thyme and bay leaf.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove bay leaf before serving.

Notes

  • Use a dry red wine like Pinot Noir or Cabernet Sauvignon.
  • For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir into the slow cooker 30 minutes before serving.
  • Serve with mashed potatoes or crusty bread.
