- 1 lb chicken breast, thinly sliced
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 1 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tsp brown sugar
- 1 cup sliced mushrooms
- 1 bell pepper, sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat oil in a pot over medium heat. Add chicken and cook until no longer pink.
- Stir in chicken broth, coconut milk, red curry paste, fish sauce, lime juice, and brown sugar. Bring to a simmer.
- Add mushrooms and bell pepper. Cook for 5-7 minutes until vegetables soften.
- Garnish with cilantro before serving.
