These delicious seafood skewers are perfect for grilling, packed with flavor and great for summer barbecues!


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 1 pound firm white fish (like cod or halibut), cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
  2. Add shrimp, scallops, fish, bell peppers, and zucchini to the bowl. Toss to coat evenly and marinate for 15-30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated seafood and vegetables onto the soaked skewers, alternating between seafood and veggies.
  5. Place the skewers on the grill and cook for 2-3 minutes per side, or until the seafood is opaque and cooked through.
  6. Remove from the grill and serve immediately.

Notes

  • Feel free to substitute your favorite seafood or vegetables.
  • If using metal skewers, there’s no need to soak.
