These delicious seafood skewers are perfect for grilling, packed with flavor and great for summer barbecues!
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 pound scallops
- 1 pound firm white fish (like cod or halibut), cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
- Add shrimp, scallops, fish, bell peppers, and zucchini to the bowl. Toss to coat evenly and marinate for 15-30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated seafood and vegetables onto the soaked skewers, alternating between seafood and veggies.
- Place the skewers on the grill and cook for 2-3 minutes per side, or until the seafood is opaque and cooked through.
- Remove from the grill and serve immediately.
Notes
- Feel free to substitute your favorite seafood or vegetables.
- If using metal skewers, there’s no need to soak.
