- 1 lb shrimp, peeled and deveined
- 1 lb scallops, cleaned
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 cup fish stock or water
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Stir in the chili powder, cumin, paprika, and cayenne pepper, cooking for another minute until fragrant.
- Add the diced tomatoes, kidney beans, and fish stock to the pot. Bring to a simmer and let cook for about 10 minutes, allowing the flavors to meld.
- Add the shrimp and scallops to the pot. Cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque.
- Season with salt and pepper to taste. Remove from heat.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
- Feel free to add other seafood like crab or clams for more variety.
- Adjust the spiciness by modifying the amount of cayenne pepper.
