  • 1 lb scallops, cleaned
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 cup fish stock or water
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Stir in the chili powder, cumin, paprika, and cayenne pepper, cooking for another minute until fragrant.
  3. Add the diced tomatoes, kidney beans, and fish stock to the pot. Bring to a simmer and let cook for about 10 minutes, allowing the flavors to meld.
  4. Add the shrimp and scallops to the pot. Cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque.
  5. Season with salt and pepper to taste. Remove from heat.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

  • Feel free to add other seafood like crab or clams for more variety.
  • Adjust the spiciness by modifying the amount of cayenne pepper.
