- 1 pound breakfast sausage, cooked and crumbled
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin or line with muffin liners.
- In a large bowl, combine the flour, baking powder, salt, and black pepper.
- Stir in the cooked sausage and shredded cheddar cheese until well combined.
- In another bowl, whisk together the milk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
- Muffins can be frozen for up to 2 months. To reheat, microwave for 30-60 seconds.
- Feel free to add your favorite vegetables or spices to customize the muffins.
