Ingredients

  • 1 pound breakfast sausage, cooked and crumbled
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or line with muffin liners.
  2. In a large bowl, combine the flour, baking powder, salt, and black pepper.
  3. Stir in the cooked sausage and shredded cheddar cheese until well combined.
  4. In another bowl, whisk together the milk, eggs, and melted butter.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

  • Muffins can be frozen for up to 2 months. To reheat, microwave for 30-60 seconds.
  • Feel free to add your favorite vegetables or spices to customize the muffins.
