- 1 whole chicken (about 1.5 kg)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 lemon, halved
- 4 garlic cloves, crushed
- 1 onion, quartered
Instructions
- Preheat your oven to 200°C (400°F).
- Pat the chicken dry with paper towels.
- Rub the chicken with olive oil.
- Mix salt, pepper, paprika, garlic powder, and thyme in a bowl.
- Sprinkle the spice mix evenly over the chicken.
- Stuff the cavity with lemon halves, garlic, and onion.
- Place the chicken in a roasting pan.
- Roast for 1 hour 15 minutes or until the internal temperature reaches 75°C (165°F).
- Let it rest for 10 minutes before carving.

- Use a meat thermometer for accuracy.
- Baste the chicken halfway through cooking for extra juiciness.
