Ingredients

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • 1 onion, quartered

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken with olive oil.
  4. Mix salt, pepper, paprika, garlic powder, and thyme in a bowl.
  5. Sprinkle the spice mix evenly over the chicken.
  6. Stuff the cavity with lemon halves, garlic, and onion.
  7. Place the chicken in a roasting pan.
  8. Roast for 1 hour 15 minutes or until the internal temperature reaches 75°C (165°F).
  9. Let it rest for 10 minutes before carving.
