A juicy whole roasted chicken recipe, crispy and full of flavor in just 1 hour.
Ingredients

- 1 whole chicken (approx. 1.5 kg)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 lemon, halved
- 4 garlic cloves, crushed
- 1 small onion, quartered
Instructions
- Preheat your oven to 200°C (400°F).
- Pat the chicken dry with paper towels.
- In a small bowl, mix olive oil, salt, pepper, paprika, garlic powder, and thyme.
- Rub the spice mix all over the chicken, including under the skin.
- Stuff the cavity with lemon halves, garlic, and onion.
- Place the chicken on a roasting tray and roast for 1 hour, or until the internal temperature reaches 75°C (165°F).
- Let it rest for 10 minutes before carving.
Notes
- For extra crispiness, pat the chicken thoroughly dry before seasoning.
- Use a meat thermometer to check doneness.
- Leftovers can be stored in the fridge for up to 3 days.
