Description

Ingredients

  • 1 whole chicken (approx. 1.5 kg)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • 1 small onion, quartered

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Pat the chicken dry with paper towels.
  3. In a small bowl, mix olive oil, salt, pepper, paprika, garlic powder, and thyme.
  4. Rub the spice mix all over the chicken, including under the skin.
  5. Stuff the cavity with lemon halves, garlic, and onion.
  6. Place the chicken on a roasting tray and roast for 1 hour, or until the internal temperature reaches 75°C (165°F).
  7. Let it rest for 10 minutes before carving.

  • For extra crispiness, pat the chicken thoroughly dry before seasoning.
  • Use a meat thermometer to check doneness.
