Ingredients

- 1 cup Arborio rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 chicken breast, diced
- 1 cup mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat. Add diced chicken and cook until browned. Remove and set aside.
- In the same pan, melt butter and sauté onions and garlic until soft.
- Add mushrooms and cook until tender.
- Stir in Arborio rice and cook for 1-2 minutes.
- Gradually add chicken broth, one ladle at a time, stirring frequently until absorbed.
- Once rice is almost cooked, add heavy cream and stir well.
- Return chicken to the pan and mix.
- Finish with grated Parmesan cheese, salt, and pepper. Serve hot.
Notes
- Use fresh mushrooms for better flavor.
- Stir the risotto often to prevent sticking.
- Adjust creaminess by adding more broth if needed.
