Ingredients

  • 1 cup Arborio rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Add diced chicken and cook until browned. Remove and set aside.
  2. In the same pan, melt butter and sauté onions and garlic until soft.
  3. Add mushrooms and cook until tender.
  4. Stir in Arborio rice and cook for 1-2 minutes.
  5. Gradually add chicken broth, one ladle at a time, stirring frequently until absorbed.
  6. Once rice is almost cooked, add heavy cream and stir well.
  7. Return chicken to the pan and mix.
  8. Finish with grated Parmesan cheese, salt, and pepper. Serve hot.

Notes

  • Use fresh mushrooms for better flavor.
  • Stir the risotto often to prevent sticking.
  • Adjust creaminess by adding more broth if needed.
