- 2 medium zucchinis, sliced
- 200g pasta
- 300g chicken breast, diced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add the chicken and cook until browned.
- Add the garlic and zucchini to the pan. Cook until the zucchini is tender.
- Pour in the heavy cream and bring to a simmer. Add the parmesan cheese and stir until melted.
- Add the cooked pasta to the pan and toss to combine. Season with salt and pepper.
- Serve hot, garnished with extra parmesan if desired.
Notes
- Use gluten-free pasta if needed.
- Add some chili flakes for a bit of heat.
