  • 1 lb rhubarb, chopped
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup water
  • 1 tbsp grated fresh ginger

Instructions

  1. Prepare the Rhubarb: Wash and chop the rhubarb into 1/2-inch pieces.
  2. Combine Ingredients: In a saucepan, combine the rhubarb, sugar, and water. For Strawberry Rhubarb Compote, add the strawberries. For Ginger Rhubarb Compote, add the grated ginger.
  3. Cook the Compote: Bring the mixture to a simmer over medium heat. Reduce heat and cook for 10-15 minutes, or until the rhubarb is tender and the compote has thickened slightly. Stir occasionally to prevent sticking.
  4. Adjust Sweetness: Taste and add more sugar if needed. For Basic Rhubarb Compote, stir in lemon juice if desired.
  5. Cool and Serve: Remove from heat and let the compote cool slightly before serving. Store leftovers in an airtight container in the refrigerator.
