Ingredients

  • 16 oz cream cheese
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup blueberries
  • 1 cup strawberries
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter to create the crust. Press the mixture into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. Gently fold in the whipped heavy cream until just combined.
  5. Pour half of the cheesecake mixture over the crust and smooth it out.
  6. Add a layer of blueberries on top of the cheesecake mixture.
  7. Pour the remaining cheesecake mixture over the blueberries and smooth it out again.
  8. Top with sliced strawberries for the red layer.
  9. Chill the cheesecake in the refrigerator for at least 4 hours or until set.
  10. Before serving, garnish with additional blueberries and strawberries if desired.

Notes

  • For a firmer cheesecake, let it chill overnight.
  • Feel free to use other fruits for decoration, such as raspberries or blackberries.
