- 16 oz cream cheese
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 cup blueberries
- 1 cup strawberries
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter to create the crust. Press the mixture into the bottom of a springform pan.
- In another bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Gently fold in the whipped heavy cream until just combined.
- Pour half of the cheesecake mixture over the crust and smooth it out.
- Add a layer of blueberries on top of the cheesecake mixture.
- Pour the remaining cheesecake mixture over the blueberries and smooth it out again.
- Top with sliced strawberries for the red layer.
- Chill the cheesecake in the refrigerator for at least 4 hours or until set.
- Before serving, garnish with additional blueberries and strawberries if desired.
Notes
- For a firmer cheesecake, let it chill overnight.
- Feel free to use other fruits for decoration, such as raspberries or blackberries.
