Ingredients

  • 2 3/4 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 Large eggs
  • 1 tablespoon Vanilla extract
  • 1 cup Milk
  • As needed Red gel food coloring
  • As needed Blue gel food coloring
  • 2 cups Heavy whipping cream
  • 1/2 cup Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)
  • For garnish Fresh berries (strawberries, blueberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly into two bowls. Tint one bowl with red gel food coloring and the other with blue gel food coloring, mixing until you reach the desired colors.
  6. Pour the red batter into one prepared cake pan, the blue batter into another, and the remaining plain batter into the third pan.
  7. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. While the cakes cool, prepare the frosting. In a large bowl, beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
  9. Once the cakes are completely cool, place the red cake layer on a serving platter. Spread a layer of whipped cream frosting on top, then add the white layer, followed by more frosting. Finally, place the blue layer on top and frost the entire cake with the remaining whipped cream frosting.
