These Raspberry Lemonade Bars combine a tangy lemon filling with a sweet raspberry swirl, creating a perfect summer dessert.

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup fresh raspberries, mashed
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a mixing bowl, combine the flour and powdered sugar. Stir in the melted butter until crumbly. Press the mixture into the bottom of the prepared dish to form a crust.
- Bake the crust for 15 minutes, or until lightly golden.
- In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and salt until well combined.
- Pour the lemon mixture over the baked crust. Spoon the mashed raspberries on top and swirl them gently with a knife.
- Return to the oven and bake for an additional 20-25 minutes, or until the filling is set.
- Allow to cool completely in the pan before slicing into bars. Dust with powdered sugar before serving.
Notes
- For a more intense raspberry flavor, you can use raspberry puree instead of mashed raspberries.
- These bars can be stored in the refrigerator for up to 5 days.
