These Raspberry Lemonade Bars combine a tangy lemon filling with a sweet raspberry swirl, creating a perfect summer dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup fresh raspberries, mashed
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine the flour and powdered sugar. Stir in the melted butter until crumbly. Press the mixture into the bottom of the prepared dish to form a crust.
  3. Bake the crust for 15 minutes, or until lightly golden.
  4. In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and salt until well combined.
  5. Pour the lemon mixture over the baked crust. Spoon the mashed raspberries on top and swirl them gently with a knife.
  6. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set.
  7. Allow to cool completely in the pan before slicing into bars. Dust with powdered sugar before serving.

Notes

  • For a more intense raspberry flavor, you can use raspberry puree instead of mashed raspberries.
  • These bars can be stored in the refrigerator for up to 5 days.
