A creamy and flavorful potato salad made with red skin potatoes and ranch dressing.
Ingredients

- 2 lbs red skin potatoes, cubed
- 1/2 cup ranch dressing
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Boil the cubed potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
- In a large bowl, mix ranch dressing, mayonnaise, and sour cream.
- Add the cooled potatoes, celery, red onion, and parsley to the bowl.
- Toss gently to coat all ingredients evenly.
- Season with salt and black pepper.
- Refrigerate for at least 1 hour before serving.
Notes
- For extra flavor, add crispy bacon bits.
- Adjust salt and pepper to taste.
- Best served chilled.
