A creamy and flavorful potato salad made with red skin potatoes and ranch dressing.


Ingredients

  • 2 lbs red skin potatoes, cubed
  • 1/2 cup ranch dressing
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Boil the cubed potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
  2. In a large bowl, mix ranch dressing, mayonnaise, and sour cream.
  3. Add the cooled potatoes, celery, red onion, and parsley to the bowl.
  4. Toss gently to coat all ingredients evenly.
  5. Season with salt and black pepper.
  6. Refrigerate for at least 1 hour before serving.
