Ingredients

  • 1 cup cooked quinoa
  • 1 cup grated zucchini
  • 1/2 cup grated carrot
  • 1/4 cup chopped spinach
  • 1/4 cup bread crumbs
  • 1 egg (or flax egg for vegan)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix quinoa, zucchini, carrot, spinach, bread crumbs, egg, garlic powder, salt, and pepper.
  3. Form small patties with the mixture.
  4. Heat olive oil in a pan over medium heat.
