Ingredients

- 1 cup cooked quinoa
- 1 cup grated zucchini
- 1/2 cup grated carrot
- 1/4 cup chopped spinach
- 1/4 cup bread crumbs
- 1 egg (or flax egg for vegan)
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix quinoa, zucchini, carrot, spinach, bread crumbs, egg, garlic powder, salt, and pepper.
- Form small patties with the mixture.
- Heat olive oil in a pan over medium heat.
- Lightly fry patties for 2-3 minutes per side until golden.
- Transfer to a baking sheet and bake for 10 minutes.
- Serve warm with your favorite dip.
Notes
- Squeeze excess water from zucchini before mixing.
- For crispier bites, bake longer.
- Store leftovers in an airtight container for up to 3 days.
