Ingredients

  • 4 tilapia fillets
  • 1 cup roasted red peppers, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup chicken or vegetable broth
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add chopped roasted red peppers and cook for 2 minutes.
  4. Pour in broth, paprika, salt, and black pepper. Stir well.
  5. Place tilapia fillets in the skillet and spoon sauce over them.
  6. Cover and cook for 5-7 minutes, until the fish flakes easily.
  7. Drizzle with lemon juice and garnish with fresh parsley.
  8. Serve immediately.
