- 4 tilapia fillets
- 1 cup roasted red peppers, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 cup chicken or vegetable broth
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add chopped roasted red peppers and cook for 2 minutes.
- Pour in broth, paprika, salt, and black pepper. Stir well.
- Place tilapia fillets in the skillet and spoon sauce over them.
- Cover and cook for 5-7 minutes, until the fish flakes easily.
- Drizzle with lemon juice and garnish with fresh parsley.
- Serve immediately.
Notes
- Adjust salt and pepper to taste.
- For extra heat, add a pinch of red pepper flakes.
- Substitute tilapia with any white fish like cod or halibut.
