Description
A flavorful West African dish featuring marinated chicken cooked with onions, lemon, and mustard.
Ingredients

- 4 chicken thighs
- 4 chicken drumsticks
- 3 large onions, sliced
- 4 cloves garlic, minced
- 2 tbsp Dijon mustard
- 1/2 cup lemon juice
- 1/4 cup vegetable oil
- 1 scotch bonnet pepper (optional)
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Mix lemon juice, mustard, garlic, salt, and black pepper in a bowl.
- Coat chicken with the marinade and refrigerate for at least 2 hours.
- Heat oil in a pan and brown the chicken. Set aside.
- In the same pan, sauté onions until soft.
- Add chicken back to the pan with any remaining marinade.
- Cover and simmer for 30-35 minutes until chicken is cooked.
- Serve hot with rice or couscous.
Notes
- Adjust scotch bonnet pepper for desired spiciness.
- Marinate overnight for deeper flavor.
- Use lime juice if lemon is unavailable.
